In a medium pot cook the chopped bacon until close to being crisp and bacon grease is coating the bottom of the pot. Mix in butter, onion, and garlic and cook until it gets soft which usually takes about 2 or 3 mins. Add your spinach cooking it until it begins to warm and wilt down. Next add cream, nutmeg, salt and pepper. Cook until the liquid to reduces by about half which should take about 3 to 5 mins. Lastly plate and top the spinach with parmesan cheese.
I originally saw this recipe on Paula Dean's television show and had to try it. I just had to put my own little flare on it. Overall, this recipe turned out very good in my opinion. However, I don't really think the butter is necessary for this dish so I'll be sure to try it without the butter next time. I mixed this side dish up with rice and peas and brown sugar marinated chicken breast. This is definitely something to add to my regular cooking routine.
